We basically took the coconut four “Honey Muffins” recipe from Cooking with Coconut Flour to make the cake. Just double the recipe and make it in a springform pan so it’s easy to get out. The icing we improvised on and it turned out pretty darn good.
I don’t have specific quantities but something along the lines of the following should work:
1/2 cup Dry curd cottage cheese
1/4 cup Thick homemade yogurt from 1/2 and 1/2 cream (10%)
2 tbsp Honey
1/4 tsp vanilla
Beat together top four ingredients. Add coconut flour until it’s the right consistency
