Update: Weight, Meat

So I’ve been on the SCD diet for about 4 weeks now and trying to gain weight. My naturopath told me to aim for over 2000 calories consistently everyday. Well, it’s been tough to reach that 2000 calories. I find myself with 1500 calories after dinner, struggling to down 500 more calories somehow. I know I’ve been overdoing it on the nut products (almond butter brownies) and that’s not so good for a sensitive tummy. I’ve also been snacking on these Organic Food Bars which I ordered pre-SCD. At 300 calories and pretty tasty it’s an easy way to bump up my daily total. However, they aren’t SCD-legal and they are a bit more of an ‘advanced’ food with all the dried fruit, agave nectar, etc. I’m almost done the pack and I think when I’m done I’ll have to look around for some SCD-legal ones. I hear LaraBars are SCD-legal so maybe I’ll give those a try. To anyone not on SCD, the Ogranic Food Bars are a pretty healthy choice for on-the-go snack bars.

I have also been trying to eat more good quality meat other than chicken breasts to gain weight. So far I have found quite a few good sources. I found some pasture-raised lamb and organic beef from the natural food store. At another grocery store I found some bison meat, also pasture-raised. So each week I’m trying to eat once each lamb, beef, bison, wild fish and then supplementing with lots of chicken. I have also started eating more chicken thigh and leg meats instead of just breast meat.

I’ll have to wait a while to report on my weight, I don’t want to jinx myself 😉

I have been following the Specific Carbohydrate Diet since January 2008 to recover from Celiac disease. As part of the diet, I don't eat grains, sugar or potatoes and prepare all my meals from scratch.
