So yesterday I made some meatballs and decided I should post the recipe here. It’s basically a slight variation of Veal Meatballs, Italian-Style with Sauce found on www.scdrecipe.com
Beef Meatballs
1 lb ground beef
1/4 cup minced green onion
1 egg
2 tbsp fresh parsley, finely chopped
1 clove garlic, finely chopped
1/2 tsp salt
1/2 tsp pepper
Mix all ingredients in a bowl. Form 12 balls and place in a well oiled/greased baking dish. Bake at 350F for 25-30 minutes, turning once. Serve with ketchup.
An interesting note: you can freeze fresh parsley (or any fresh herb for that matter). I never have fresh herbs around because it’s so much easier to have dried ones which keep for longer. However, you can freeze the fresh parsley in small ziplock bags and break off pieces of what you need at a time. Let it thaw and then use as you normally would. I haven’t tried freezing chopped up parsley but I think it would work too.
