Doctor’s Orders!

I had an appointment with my naturopath today. I’ve been seeing her about every 6 weeks and we’ve been working together to try and get me healthier. Well now the focus is gaining weight. Since the SCD diet is working well I’m to keep that up and just eat more more more!

So she wants me to eat over 2000 calories per day. Doesn’t sound like much, but I logged in what I was eating on fitday.com and it was only about 1600 calories. Some days when I was literally stuffing my face it was closer to 1800. So, how do I make up the extra calories? Well how about another serving of delicious almond butter brownies! I’ve been making these since starting the SCD diet and it’s been a very tasty addition to my day. I usually eat one in the morning for breakfast with some blueberries (just like in the picture here). I guess now I’ll have to have one for desert in the evening too. Darn it, such hard work!

Other than that I plan to continue eating healthy fats and meats like avocados, coconut oil, nuts, salmon, organic eggs, chicken and beef. I’m continuing to increase my carbs by having lots of winter squashes and fruit. My naturopath also suggested a good meat market to go to for wild and/or grass fed meats. I will definitely be checking that out soon.

I have been following the Specific Carbohydrate Diet since January 2008 to recover from Celiac disease. As part of the diet, I don't eat grains, sugar or potatoes and prepare all my meals from scratch.

    Today’s late breakfast was 1 banana, a few red grapes and a softboiled whole egg and peppermint tea. (Yum, I’ve missed that.) So now let’s hope my bowels don’t act up.
